Now I am not trying to convince you that desserts are great and should be a big part of your diet. As with all foods, they should be eaten within reason. However, some desserts are healthier than others. We can make healthier desserts by starting with healthy ingredients. There is an old saying that an apple a day keeps the doctor away and it is generally acknowledged that apples are healthy foods. Walnuts are also know to be healthy foods and should be a part of a healthy diet. So the next time you want a good slice of cake with a cup of coffee, etc choose this Fresh Apple Walnut Bundt Cake. To make it even better for you try the following substitutions: Instead of 3 cups of all-purpose flour, use 2 cups of all-purpose flour and 1 cup of whole-wheat flour which has more fiber. Instead of 2 cups of sugar, use 2 cups of Splenda Blend and that will cut the sugar in half without sacrificing flavor. If you are concerned about eggs, substitute 1/2 cup egg substitute for the 2 eggs and you won't even notice the difference. This cake is easy, inexpensive, tasty, and healthy too. Now that is a pretty good deal!

FRESH APPLE-WALNUT BUNDT CAKE

3 cups all-purpose flour
2 cups sugar
1/2 tsp salt
1 tsp baking soda
1 tsp nutmeg
1 tsp cinnamon
1 1/4 cups cooking oil
2 eggs
2 tsp vanilla
1 cup walnuts, coarsely chopped
3 cups fresh apples, peeled and coarsely chopped

Preheat oven to 325 degrees.

In a large mixing bowl combine the flour, sugar, salt, baking soda, nutmeg, and cinnamon together well. Add the oil, eggs, and vanilla, mixing until well blended. Stir in the walnuts and apples. Pour the batter into a greased Bundt pan and bake in a 325 degree oven for 1 hour and 15 minutes.
